This Carnivore Stuffed Meat Roll is a rich, protein-packed meal made almost entirely from animal-based ingredients. A flavorful layer of seasoned ground beef is flattened into a large rectangle, filled with plenty of melted cheese, rolled into a log, then baked until juicy on the inside and beautifully browned on the outside. Ingredients

2 pounds (900 g) ground beef, preferably 80/20

2 teaspoons sea salt

1 teaspoon black pepper (optional for strict carnivore followers)

1 teaspoon garlic powder (optional)

2 large eggs

1 cup finely grated Parmesan cheese

3 cups shredded mozzarella cheese

8 ounces sliced cheddar cheese

4 ounces cream cheese, softened

4 tablespoons melted butter

Extra shredded cheese for topping

Preparing the Beef Base

Place the ground beef into a large mixing bowl.

Add salt, eggs, and Parmesan cheese.

Lay a large sheet of parchment paper on a work surface.

Softened cream cheese

2 cups mozzarella cheese

Half of the cheddar cheese

Leave a one-inch border around all edges.

Arrange the remaining cheddar slices evenly over the cream cheese layer.

Sprinkle the remaining mozzarella over the top.

Rolling the Meat Log

Starting from the long side, carefully lift the parchment.

Roll the meat tightly into a large log.

Work slowly to prevent cracking.

Continue rolling until a complete cylinder forms.

Pinch the seam closed.

Seal both ends by pressing the meat together.

Transfer the roll seam-side down onto a parchment-lined baking sheet.

Brush the outside with melted butter.


Baking Instructions

Preheat oven to 375°F (190°C).

Place the meat roll in the center rack.

Bake for 35 minutes.

Remove from the oven.

Brush again with melted butter.

Sprinkle extra shredded cheese over the top.

Return to the oven.

Continue baking for another 10 to 15 minutes.

The internal temperature should reach 160°F (71°C). Ground beef rolls are commonly baked until fully cooked and safe to eat.

For a golden cheesy crust, broil for 2 to 3 minutes at the end.

Watch carefully to avoid burning.


Resting the Roll

Remove from the oven.

Tent loosely with foil.

Allow the roll to rest for 10 minutes.

Resting helps redistribute juices throughout the meat.

The cheese filling also thickens slightly, making cleaner slices possible.
