This is a colorful, crunchy vegetable slaw that works well as a side dish for grilled foods, sandwiches, wraps, burgers, or as a light salad. It combines fresh vegetables with a creamy, tangy dressing and can easily be customized to suit your taste.

Ingredients

For the Vegetables

  • 4 cups green cabbage, finely shredded
  • 2 cups purple cabbage, finely shredded
  • 2 large carrots, peeled and grated
  • 1 red bell pepper, cut into thin strips
  • 1 yellow bell pepper, cut into thin strips
  • 1 cucumber, seeded and cut into thin matchsticks
  • 1 small red onion, sliced very thin
  • 2 celery stalks, thinly sliced
  • 3 green onions, finely chopped
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh cilantro, chopped (optional)

For the Dressing

  • ¾ cup mayonnaise
  • ¼ cup plain yogurt or sour cream
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1 teaspoon sugar (optional)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon celery seed
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • 1 teaspoon salt, or to taste

Optional Additions

  • ½ cup toasted sunflower seeds
  • ¼ cup pumpkin seeds

Step 1: Prepare the Cabbage

Remove any damaged outer leaves from both cabbages. Cut each cabbage into quarters and remove the hard core. Slice the cabbage into very thin strips using a sharp knife or a food processor fitted with a slicing attachment.

Place all the shredded cabbage into a large bowl.

Step 2: Prepare the Carrots

Wash and peel the carrots. Grate them using the large holes of a box grater or use a food processor. Add the grated carrots to the cabbage.

Step 3: Slice the Bell Peppers

Wash the peppers thoroughly. Remove the stems, seeds, and white membranes. Slice into very thin strips so they mix evenly throughout the slaw.

Add them to the bowl.

Step 4: Prepare the Cucumber

Wash the cucumber. If the seeds are large, remove them with a spoon. Cut into thin matchsticks or small strips.

Mix with the other vegetables.

Step 5: Slice the Onion

Peel the onion and slice it as thinly as possible. Thin slices distribute the flavor without overpowering the slaw.

If you prefer a milder onion flavor, soak the slices in cold water for 10 minutes, then drain well before adding them.

Step 6: Prepare the Celery

Wash the celery stalks carefully. Slice them into very thin pieces.

Add them to the bowl.

Step 7: Chop the Herbs

Wash and dry the parsley, dill, and cilantro.

Finely chop the herbs and add them to the vegetables.

Step 8: Make the Dressing

In a separate bowl, combine:

  • Mayonnaise
  • Yogurt
  • Dijon mustard
  • Apple cider vinegar
  • Lemon juice
  • Honey
  • Sugar (if using)
  • Garlic powder
  • Onion powder
  • Celery seed
  • Paprika
  • Salt
  • Black pepper

Whisk until completely smooth and creamy.
