For the Coconut Filling

  • 4 cups desiccated coconut
  • 1 cup sweetened condensed milk
  • 1/2 cup heavy cream
  • 1/4 cup coconut cream
  • 5 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 4 tablespoons unsalted butter, softened

For the Chocolate Coating

  • 500 grams milk chocolate
  • 150 grams dark chocolate
  • 2 tablespoons coconut oil or butter

Optional Flavor Additions

You may add any of these:

  • Chopped almonds
  • Hazelnuts
  • Caramel drizzle
  • White chocolate
  • Crushed biscuits
  • Espresso powder
  • Sea salt flakes

Equipment Needed

  • Mixing bowl
  • Spoon or spatula
  • Baking tray or flat plate
  • Butter paper or parchment paper
  • Knife
  • Refrigerator or freezer
  • Double boiler or microwave-safe bowl

Step 1 – Prepare the Coconut Mixture

Take a large mixing bowl.

Add:

  • Desiccated coconut
  • Powdered sugar
  • Salt

Mix everything very well.

Now add:

  • Condensed milk
  • Heavy cream
  • Coconut cream
  • Vanilla extract
  • Soft butter

Mix slowly at first.

After a minute, the mixture will start becoming thick, sticky, and creamy.

Keep mixing until all coconut is evenly coated.

The texture should be:

  • Soft
  • Slightly sticky
  • Easy to shape with hands

If the mixture feels too dry:

  • Add 1 tablespoon condensed milk.

If too wet:

  • Add more desiccated coconut.

Step 2 – Shape the Bars

Line a tray with parchment paper.

Take small portions of the coconut mixture and shape them into bars.

You can make:

  • Mini bars
  • Thick bars
  • Long bars
  • Bite-sized squares

Traditional shape:

  • Around 3 inches long
  • 1 inch wide
  • Slightly rounded edges

Place each bar carefully on the tray.

Repeat until all mixture is used.

Step 3 – Chill the Bars

Place tray in freezer for 45 minutes.

OR

Refrigerate for 2 hours.

This step is important because firm bars are easier to coat in chocolate.

Step 4 – Melt the Chocolate

Take a heatproof bowl.

Add:

  • Milk chocolate
  • Dark chocolate
  • Coconut oil

Use double boiler method:

  • Place bowl over hot water
  • Stir slowly until smooth

OR microwave:

  • Heat in 20-second intervals
  • Stir every time

Chocolate should become:

  • Smooth
  • Glossy
  • Pourable

Do not overheat.

Step 5 – Coat the Coconut Bars

Remove chilled coconut bars from freezer.

Using two forks or dipping tools:

  • Dip each bar into melted chocolate
  • Coat fully
  • Lift carefully
  • Let extra chocolate drip off

Place coated bars back onto parchment paper.

Repeat for all bars.

Step 6 – Final Chill

Refrigerate bars for 20 to 30 minutes.

Chocolate will harden beautifully.

The inside stays creamy while outside becomes slightly crisp.

Optional Decoration Ideas

You can decorate bars using:

  • Melted white chocolate drizzle
  • Coconut flakes
  • Crushed nuts
  • Gold sprinkles
  • Cocoa powder dusting

Storage Instructions

Refrigerator

Store in airtight container:

  • Up to 2 weeks

Freezer

Freeze for:

  • Up to 2 months

Place parchment paper between layers so bars do not stick together.
