Keto Cheese Buns

Introduction

These keto cheese buns are soft, cheesy, flavorful, and low in carbohydrates. They are perfect for breakfast, lunch, dinner, or as a snack. They can be served with butter, cream cheese, soups, salads, burgers, or simply enjoyed on their own. This recipe creates buns with a golden crust, a tender interior, and plenty of cheesy flavor.

Preparation Time

  • Preparation: 20 minutes
  • Baking: 20–25 minutes
  • Cooling: 15 minutes
  • Total Time: About 1 hour

Yield

Makes 8 medium buns.

Ingredients

Dry Ingredients

  • 2 cups almond flour
  • 2 teaspoons baking powder
  • 1 teaspoon xanthan gum (optional, for better texture)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cheese Mixture

  • 2 cups shredded mozzarella cheese
  • 2 ounces cream cheese

Wet Ingredients

  • 2 large eggs
  • 2 tablespoons melted butter
  • 1 teaspoon apple cider vinegar (optional)
  • 1 teaspoon Italian seasoning (optional)

Optional Mix-Ins

  • 2 tablespoons chopped parsley
  • 1 tablespoon chopped chives
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon sesame seeds
  • 1 teaspoon flax seeds
  • 1 teaspoon everything bagel seasoning

Equipment

  • Large mixing bowl
  • Microwave-safe bowl
  • Baking tray
  • Parchment paper
  • Measuring cups
  • Measuring spoons
  • Silicone spatula
  • Whisk
  • Cooling rack

Step 1: Prepare the Oven

Preheat the oven to 375°F (190°C). Line a baking tray with parchment paper. This prevents sticking and makes cleanup easier.

Step 2: Mix the Dry Ingredients

In a large bowl combine:

  • Almond flour
  • Baking powder
  • Xanthan gum
  • Garlic powder
  • Onion powder
  • Salt
  • Black pepper

Whisk everything together until evenly mixed. Breaking up any small lumps in the almond flour helps create a smoother dough.

Step 3: Melt the Cheese

Place the mozzarella cheese and cream cheese into a microwave-safe bowl.

Microwave for 30 seconds.

Stir.

Microwave another 30 seconds.

Stir again.

Continue heating in short intervals until the cheeses are completely melted and smooth. Do not overheat because the cheese can become oily.

If you do not have a microwave, melt the cheeses gently over a double boiler while stirring continuously.

Step 4: Prepare the Wet Ingredients

In another bowl beat the eggs until smooth.

Add:

  • Melted butter
  • Apple cider vinegar
  • Italian seasoning

Whisk until fully combined.

Step 5: Form the Dough

Pour the egg mixture into the dry ingredients.

Add the melted cheese mixture immediately while it is still warm.

Using a sturdy spoon or silicone spatula, mix everything together.

When the dough becomes difficult to stir, lightly grease your hands with oil or butter and knead it gently for several minutes until it becomes smooth and evenly combined.

If the dough cools too much and becomes difficult to handle, warm it for a few seconds before continuing.

Step 6: Add Optional Ingredients

Fold in any optional ingredients such as:

  • Chopped parsley
  • Chopped chives
  • Parmesan cheese

Mix until evenly distributed throughout the dough.

Step 7: Divide the Dough

Divide the dough into 8 equal portions.

Roll each portion into a smooth ball.

Arrange the balls on the prepared baking tray, leaving space between each bun for expansion.

If desired, sprinkle the tops with sesame seeds, flax seeds, Parmesan cheese, or everything bagel seasoning.

Step 8: Bake

Place the tray in the preheated oven.

Bake for approximately 20 to 25 minutes.

The buns are done when:

  • The tops are deep golden brown.
  • The bottoms are lightly browned.
  • The buns feel firm when gently pressed.
  • A toothpick inserted into the center comes out mostly clean.

Avoid overbaking because the buns may become dry.

Step 9: Cool

Remove the tray from the oven.

Allow the buns to cool on the baking tray for about 5 minutes.

Transfer them to a cooling rack and let them cool another 10 to 15 minutes.

Cooling helps the interior finish setting and improves the texture.

Serving Suggestions

Serve the buns with:

  • Butter
  • Cream cheese
  • Garlic butter
  • Scrambled eggs
  • Fried eggs
  • Omelets
  • Chicken salad

Storage

Store cooled buns in an airtight container.

At room temperature they remain fresh for about 2 days.

In the refrigerator they stay fresh for up to 1 week.

For longer storage, freeze them individually. Wrap each bun well before freezing.

Frozen buns can be stored for up to 3 months.

Reheating

To reheat:

  • Microwave for 15 to 25 seconds.
  • Warm in a 325°F (163°C) oven for 5 to 8 minutes.
  • Toast sliced buns until lightly crisp.

Helpful Tips

  • Use finely ground almond flour for the softest texture.
  • Freshly shredded mozzarella melts better than pre-shredded cheese.
  • Mix the dough while the cheese is still warm.
  • Lightly oil your hands if the dough becomes sticky.
  • Avoid adding too much almond flour because it can make the buns dense.
  • Bake until just golden for a moist interior.
  • Allow the buns to cool before slicing.
  • Store only completely cooled buns to prevent excess moisture.
  • Freeze leftovers for convenient future meals.

Optional Flavor Variations

You can customize the buns by adding:

  • Dried oregano
  • Dried basil
  • Fresh rosemary
  • Fresh thyme
  • Chili flakes
  • Smoked paprika
  • Extra cheddar cheese
  • Pepper jack cheese
  • Parmesan cheese
  • Cooked chopped bacon
  • Jalapeños
  • Sun-dried tomatoes (in small amounts)
  • Fresh herbs

Each variation gives the buns a different flavor while keeping them satisfying and low in carbohydrates.
