Overview
Magic Chia Jam is a naturally thick, fruit-filled spread that comes together with fresh or frozen fruit, a touch of sweetener, and chia seeds. The chia seeds absorb liquid and create a smooth, spoonable texture without the need for commercial pectin. Ingredients
- 4 cups strawberries, raspberries, blueberries, or a mixed combination
- 2 to 4 tablespoons honey or maple syrup, adjusted to taste
- 2 tablespoons fresh lemon juice
- 3 tablespoons chia seeds
- 1 teaspoon vanilla extract (optional)

Directions
- Wash the fruit thoroughly if using fresh fruit. Remove stems, leaves, or any damaged pieces.

- Cook for about 8 to 10 minutes, stirring often, until the fruit becomes soft and releases plenty of juice.
- Mash the fruit with a potato masher or the back of a fork until the texture is as smooth or chunky as you prefer.
- Stir in the honey or maple syrup and mix well.
- Add the lemon juice and continue stirring for another minute.
- Remove the saucepan from the heat.
- Sprinkle the chia seeds evenly over the warm fruit mixture while stirring continuously to prevent clumping.
- Add the vanilla extract and salt if using.
- Let the mixture rest for 5 minutes.
- Stir again thoroughly.
- Allow the jam to sit for another 20 to 30 minutes so the chia seeds can fully thicken the mixture.
- Taste and adjust sweetness if desired.
- Transfer the finished jam to a clean glass jar.
- Cool completely before sealing with the lid.
- Store in the refrigerator for up to one week.
