These High-Protein Crispy Breaded Mushrooms are crunchy on the outside, juicy and tender on the inside, and packed with extra protein from a seasoned coating made with protein-rich ingredients. They make an excellent appetizer, snack, side dish, or party food. The mushrooms develop a golden-brown crust while staying moist and flavorful inside.

Ingredients

500 grams button mushrooms or cremini mushrooms

1 cup plain Greek yogurt

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon dried parsley

1 teaspoon salt

½ teaspoon black pepper

1 cup high-protein flour or chickpea flour

1 cup crushed high-protein cereal or whole wheat breadcrumbs

½ cup grated Parmesan cheese

½ cup unflavored protein powder suitable for cooking

2 tablespoons nutritional yeast

Cooking spray or 2 tablespoons olive oil

For the Dipping Sauce

1 cup Greek yogurt

1 tablespoon lemon juice

1 teaspoon garlic powder

½ teaspoon paprika

¼ teaspoon black pepper

¼ teaspoon salt

1 tablespoon finely chopped parsley

Method

Clean the mushrooms with a damp paper towel. Avoid soaking them in water because mushrooms absorb moisture quickly and may become soggy during cooking.

Trim the stems if necessary and set the mushrooms aside.

In a medium mixing bowl, combine the Greek yogurt, eggs, garlic powder, onion powder, paprika, parsley, salt, and black pepper. Whisk until completely smooth.

In a separate shallow bowl, mix the high-protein flour, protein powder, nutritional yeast, Parmesan cheese, and crushed breadcrumbs. Stir thoroughly so the seasonings are evenly distributed throughout the coating mixture.

Take each mushroom and dip it into the yogurt and egg mixture. Make sure every surface is coated.

Place the coated mushrooms on a tray lined with baking paper.

Oven Method

Bake for 10 minutes.

Carefully turn the mushrooms over.

Air Fryer Method

Preheat the air fryer to 200°C for 3 minutes.

Arrange the mushrooms in a single layer inside the basket.

Lightly spray them with cooking spray.

Cook for 10 to 12 minutes, shaking the basket halfway through cooking.

Continue cooking until the coating becomes crisp and deeply golden.

Dipping Sauce

Combine the Greek yogurt, lemon juice, garlic powder, paprika, black pepper, salt, and parsley in a bowl.

Mix until smooth and creamy.

Refrigerate for 10 minutes before serving to allow the flavors to blend together.
