Instructions

1. Prepare the Vegetables

Remove the outer leaves from the cabbage and cut it into quarters. Remove the tough core and slice the cabbage as thinly as possible.

Add the green and red cabbage to a large mixing bowl.

Peel the carrot and either grate it using a box grater or cut it into thin matchsticks. Julienne-style carrots add extra texture and make the finished slaw especially colorful.

Thinly slice the red onion. If you prefer a milder onion flavor, soak the slices in cold water for about 10 minutes, then drain well.

Using tongs or two large spoons, toss everything thoroughly, making sure the dressing reaches all the way to the bottom of the bowl.

The vegetables may initially look like they are covered in a lot of dressing, but that’s completely normal. As the slaw rests, the cabbage will absorb some of the flavorful pickling liquid.

4. Let It Rest

For a deeper pickled flavor, transfer it to a covered container and refrigerate for at least 2 hours.
